Pulled Pork for Days

Over the weekend I made my “Downtown Mr. Brown” pork butt in my UDS leaving me with copious amount of leftover pulled pork. This shoulder from Costco was so huge that our dinner with friends the night it came off the smoker barely put a dent in the tray of shredded goodness. As good as my pulled pork sandwiches are (check out my previous post on how to recreate them) I decided to venture away from the norm and create a new meal from the leftovers each night this week. Join me as I stumble upon fantastic ways to enjoy the “other white meat”.

Day One – The Oinker

This burger was incredible. And really easy to make. I topped the 1/4 lb. burger with cheddar cheese, bacon, pulled pork, BBQ sauce mixed with a bit of my vaunted vinegar sauce (recipe coming soon), grilled red onions, fried onions, and sweet pickles. Wow, just wow.

Day Two – Pineapple Pulled Pork Pizzapolooza

This pizza is pretty special. I brushed the dough with olive oil and then layered the following: BBQ sauce and vaunted vinegar mixture, pulled pork, red onions, pineapple chunks, and pickled jalapeños. Top all of that with the cheese of your choice and voila! Pizza perfection.

Day 3 – Los Pulled Pork Nachos

With the remaining pork I decided to go with a quick rendition of pulled pork nachos. My challenge over the coarse of the last three days was to only use ingredients that I had on hand so you will notice that some of the more classic nacho toppings are missing here. I think some salsa, sour cream, black olives, and guacamole would take this recipe to the next level.

And just like that my pulled pork is gone! I hope I have inspired you to keep smoking large amounts of meat; even if you are the only one in your house eating leftovers.
